Tilapia with Lemon & Caper Sauce

It's funny how our taste buds change.  As a kid I absolutely detested fish - loved shellfish - but couldn't stomach any type of fish.  Nowadays there isn't a week that goes by without fish gracing the menu.

Fish is not only a great source of protein and very healthy for you, but it is also one of the quickest dishes to prepare. 

I've made this dish a few times now and still absolutely love it!

Tilapia with Lemon & Caper Sauce
Serves 2

Preparation Time – 15 Minutes
Cooking Time – 10 Minutes



Ingredients

§  Olive Oil
§  Butter
§  2 Fresh Tilapia Filets
§  ¼ cup All Purpose Flour
§  Salt & Pepper
§  3 Tsp. Capers – chopped roughly
§  ¼ cup White Wine
§  1 Tbsp. Lemon Juice
§  1 Tbsp. Butter
§  1 Tsp. Flat Leaf Italian Parley - chopped

Preparation

1.       In a medium skillet, heat the olive and butter.
2.       Meanwhile, dredge the Tilapia filets in the flour seasoned with salt and pepper.  Shake off excess flour and add to pan.
3.       Cook for 3 to 4 minutes per side, until cooked through and lightly browned.
4.       Remove from pan and keep warm.
5.       Add capers and deglaze pan with white wine and lemon juice and reduce.  Off the heat, swirl in the butter (also known as “monté au beurre”).  Once combined, add the parsley.
